Ben's Galley Banana Pancakes: Fluffy Stack for the Crew

Updated: Jun 7

When you've got ripe bananas and a crew to feed, these aren't just any pancakes. The bananas add natural sweetness and moisture, while proper technique creates light, fluffy pancakes that'll have everyone asking for seconds.

Fresh bananas mixed right into the batter create pockets of sweet flavor and keep the pancakes incredibly moist. The key is not overmixing - lumpy batter actually makes fluffier pancakes. Perfect for using up those bananas that are getting too ripe in the galley.

The galley advantage: One-bowl mixing, uses pantry staples, and scales up easily for feeding large crews.

Ingredients (Serves 8-10)

  • 3 cups all-purpose flour

  • 3 tablespoons sugar

  • 2 tablespoons baking powder

  • 1 teaspoon salt

  • 3 large eggs

  • 2 1/2 cups whole milk

  • 1/4 cup melted butter

  • 1 teaspoon vanilla extract

  • 4-5 ripe bananas, mashed (save some slices for topping)

  • Butter or oil for cooking

Instructions

  1. Mix dry ingredients: Whisk flour, sugar, baking powder, and salt in a large bowl.

  2. Combine wet ingredients: In another bowl, beat eggs, then add milk, melted butter, and vanilla.

  3. Add bananas: Mash bananas and stir into wet ingredients.

  4. Combine gently: Pour wet ingredients into dry and stir just until combined - lumps are okay!

  5. Cook: Heat griddle or large pan over medium heat. Pour 1/4 cup batter per pancake. Cook until bubbles form and edges look set, then flip.

  6. Serve hot: Stack and serve immediately with butter, syrup, and fresh banana slices.

Chef's Tips

  • Don't overmix - lumpy batter = fluffy pancakes

  • Ripe bananas work best - they're sweeter and mash easier

  • Medium heat prevents burning while ensuring they cook through

  • Keep warm in a 200°F oven if making large batches

All-Clad Electrics Stainless Steel Immersion Blender

While you don't need an immersion blender for basic banana pancake batter (overmixing makes tough pancakes!), this All-Clad Immersion Blender becomes invaluable for pancake syrup upgrades and crew customizations.

  • Whip butter with maple syrup for fluffy pancake topping

  • Blend fresh fruit into quick berry syrups (when available)

  • Create flavored butters - honey butter, cinnamon butter
