Chocolate Chip Pancakes: Weekend Crew Morale Booster

ree

Galley Advantages:

  • Feeds 6-8 crew members easily

  • Uses basic pantry ingredients - no special items needed

  • Make-ahead batter - prep the night before for easy morning cooking

  • Customizable - crew can add extra chocolate chips if desired

Ingredients

Makes 12-15 chocolate chip pancakes (serves 6-8)

  • 2 cups all-purpose flour

  • 2 tablespoons sugar

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 2 large eggs

  • 1¾ cups milk

  • ¼ cup melted butter

  • 1 teaspoon vanilla extract

  • ¾ cup chocolate chips

  • Extra butter for cooking

Galley Method

Prep Time: 10 minutes | Cook Time: 20 minutes | Total: 30 minutes

Step 1: Mix Dry Ingredients

In a large bowl, whisk together flour, sugar, baking powder, and salt. My systematic approach (thanks to my electronics background) means getting the foundation right first.

Step 2: Combine Wet Ingredients

In another bowl, whisk eggs, then add milk, melted butter, and vanilla. Mix until just combined.

Step 3: Create the Batter

Pour wet ingredients into dry ingredients. Stir just until combined - lumpy batter is perfect! Overmixing makes tough pancakes. Gently fold in chocolate chips.

Step 4: Cook to Perfection

Heat a large skillet or griddle over medium heat. Add a little butter. Pour ¼ cup batter for each pancake.

Key technique: When bubbles form on surface and edges look set (about 2-3 minutes), flip once. Cook another 1-2 minutes until golden brown.

Crew Serving Strategy

Keep Warm: Stack finished pancakes on a plate in a 200°F oven while cooking the rest.

Toppings Station: Set out maple syrup, butter, extra chocolate chips, and fresh fruit (when available).

Batch Cooking: Use a large griddle to cook multiple chocolate chip pancakes simultaneously - efficiency matters when feeding hungry crews!

Ben's Galley Tips

Make-Ahead: Mix dry ingredients the night before. Combine with wet ingredients in the morning for fresh pancakes fast.

Rough Weather: Pre-make batter during calm conditions, store covered in fridge up to 24 hours.

Storage: Leftover pancakes freeze well - toast them for quick weekday breakfasts.

Ben's Gadgets

All-Clad Electrics Stainless Steel Immersion Blender

While you don't need an immersion blender for basic chocolate chip pancake batter (overmixing makes tough pancakes!), this All-Clad Immersion Blender becomes invaluable for pancake syrup upgrades and crew customizations.

  • Whip butter with maple syrup for fluffy pancake topping

  • Blend fresh fruit into quick berry syrups (when available)

  • Create flavored butters - honey butter, cinnamon butter
