Ben's Galley Easy Fruit Cobbler: Peach or Cherry

When you need a warm, comforting dessert that uses ingredients from the pantry, this easy fruit cobbler delivers. Choose peach for classic comfort or cherry for something a little special - both use canned fruit for reliable galley cooking.

Easy Fruit Cobbler (Serves 12-15)

Choose Your Fruit:

  • Peach Version: 6 cans (29 oz each) sliced peaches, drained

  • Cherry Version: 6 cans (21 oz each) cherry pie filling


Fruit Seasoning:

  • 1/2 cup brown sugar

  • 2 tablespoons cornstarch

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon (for peach) OR 1/2 teaspoon almond extract (for cherry)


Cobbler Topping:

  • 2 cups all-purpose flour

  • 1 cup sugar

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 1/2 cup cold butter, cubed

  • 1 cup whole milk

  • 1 large egg

  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven: 375°F (190°C). Grease a large 9x13 baking dish.

  2. Prepare fruit:

    • For Peach: Mix drained peaches, brown sugar, cornstarch, vanilla, and cinnamon

    • For Cherry: Mix cherry pie filling, brown sugar, cornstarch, vanilla, and almond extract

  3. Make topping: Whisk flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.

  4. Add wet ingredients: Whisk milk, egg, and vanilla. Add to flour mixture, stirring just until combined.

  5. Assemble: Spread fruit in dish. Drop spoonfuls of topping over fruit.

  6. Bake: 35-45 minutes until golden brown and bubbling.

  7. Serve: Let cool 15 minutes, serve warm with ice cream.
