Chicken Salad Curry Wraps (Serves 10)

Prep Time: 20 minutes Chill Time: 2+ hours (overnight is better) Assembly Time: 15 minutes

The Curry Chicken Salad:

  • 4 lbs cooked chicken, diced (rotisserie works perfectly)

  • 1 cup mayonnaise

  • 2 tablespoons curry powder

  • 1 teaspoon ground ginger

  • 1/2 teaspoon garlic powder

  • 2 tablespoons honey

  • 2 tablespoons apple cider vinegar

  • Salt and pepper to taste

The Mix-Ins:

  • 3 celery stalks, finely diced

  • 1/2 cup sliced almonds, toasted

  • 1/4 cup golden raisins

  • 2 green onions, sliced thin

  • 1/4 cup fresh cilantro, chopped

For Assembly:

  • 10 large flour tortillas

  • 2 cups mixed greens or lettuce

  • 1 cup shredded carrots (optional)

  • Extra cilantro for garnish

Instructions:

1. Make the Curry Chicken Salad:

  • In a large bowl, whisk together mayo, curry powder, ginger, garlic powder, honey, and vinegar

  • Add diced chicken and mix until well coated

  • Fold in celery, almonds, raisins, green onions, and cilantro

  • Season with salt and pepper

  • Refrigerate at least 2 hours, preferably overnight

2. Prep for Assembly:

  • Let chicken salad come to room temperature for easier spreading

  • Warm tortillas slightly for better flexibility

  • Have all assembly ingredients ready

3. Assembly Line Wrapping:

  • Lay tortilla flat

  • Spread 3/4 cup chicken salad in center, leaving 2-inch borders

  • Add handful of greens and carrots if using

  • Fold bottom edge up, fold in sides, then roll tightly

  • Wrap in foil or plastic wrap

  • Refrigerate until serving

Galley Pro Tips:

  • Chicken shortcuts: Rotisserie chicken saves time and adds flavor - just remove skin and dice

  • Toast the almonds: 5 minutes in a dry skillet makes a huge difference in flavor

  • Curry powder quality: Use good curry powder - it's the star of this dish

  • Make ahead: Chicken salad keeps 3-4 days refrigerated and actually improves with time

The Flavor Balance

What makes this curry chicken salad work:

  • Curry powder: Warm, complex spice without being overwhelming

  • Honey: Balances the curry and adds subtle sweetness

  • Grapes: Fresh sweetness and juicy texture

  • Almonds: Essential crunch and nutty richness

  • Celery: Classic crunch and fresh flavor

  • Raisins: Concentrated sweetness that complements the curry

Serving Variations

These wraps work great:

  • Cold from the fridge for packed lunches

  • At room temperature for casual meals

  • Cut in half for appetizers or lighter portions

  • Over greens as a salad instead of wrapped

  • Chicken salad keeps 3-4 days refrigerated

  • Assembled wraps hold well for 24 hours

  • Individual portions can be wrapped and grabbed as needed

  • Perfect for meal prep Sunday that lasts all week
