Chicken Salad Curry Wraps (Serves 10)
Prep Time: 20 minutes Chill Time: 2+ hours (overnight is better) Assembly Time: 15 minutes
The Curry Chicken Salad:
4 lbs cooked chicken, diced (rotisserie works perfectly)
1 cup mayonnaise
2 tablespoons curry powder
1 teaspoon ground ginger
1/2 teaspoon garlic powder
2 tablespoons honey
2 tablespoons apple cider vinegar
Salt and pepper to taste
The Mix-Ins:
3 celery stalks, finely diced
1/2 cup sliced almonds, toasted
1/4 cup golden raisins
2 green onions, sliced thin
1/4 cup fresh cilantro, chopped
For Assembly:
10 large flour tortillas
2 cups mixed greens or lettuce
1 cup shredded carrots (optional)
Extra cilantro for garnish
Instructions:
1. Make the Curry Chicken Salad:
In a large bowl, whisk together mayo, curry powder, ginger, garlic powder, honey, and vinegar
Add diced chicken and mix until well coated
Fold in celery, almonds, raisins, green onions, and cilantro
Season with salt and pepper
Refrigerate at least 2 hours, preferably overnight
2. Prep for Assembly:
Let chicken salad come to room temperature for easier spreading

Lay tortilla flat
