Curry Chicken Salad Wraps: Portable Comfort Food That Actually Satisfies

Chicken Salad Curry Wraps (Serves 10)

Prep Time: 20 minutes Chill Time: 2+ hours (overnight is better) Assembly Time: 15 minutes


The Curry Chicken Salad:

  • 4 lbs cooked chicken, diced (rotisserie works perfectly)

  • 1 cup mayonnaise

  • 2 tablespoons curry powder

  • 1 teaspoon ground ginger

  • 1/2 teaspoon garlic powder

  • 2 tablespoons honey

  • 2 tablespoons apple cider vinegar

  • Salt and pepper to taste


The Mix-Ins:

  • 3 celery stalks, finely diced

  • 1/2 cup sliced almonds, toasted

  • 1/4 cup golden raisins

  • 2 green onions, sliced thin

  • 1/4 cup fresh cilantro, chopped


For Assembly:

  • 10 large flour tortillas

  • 2 cups mixed greens or lettuce

  • 1 cup shredded carrots (optional)

  • Extra cilantro for garnish


Instructions:

1. Make the Curry Chicken Salad:

  • In a large bowl, whisk together mayo, curry powder, ginger, garlic powder, honey, and vinegar

  • Add diced chicken and mix until well coated

  • Fold in celery, almonds, raisins, green onions, and cilantro

  • Season with salt and pepper

  • Refrigerate at least 2 hours, preferably overnight
